my dream:
to be a construction worker (5 yrs old)
to be a bus conductor ( 8 yrs old)

cooking -- pastime for me.

love cooking... i dream of cooking the best desired cook for everyone. to be a world renowed chef. travel around the world. my idol that i m working hard to achieve is samuel lee, his cooking show is on channel U ( every tue, 9.30pm) the show veri niCe... shows how a chef cook, what they do, travel around the world to teach and supervise people... scold if cook is not up to standard, reprimand those who does not practise hygience and does not follow the steps accordingly.
Cooking is an art to me. it teaches us to be patience. it teaches us on how to deal with many problems involving cooking. cooking require skill, not everyone can cook well. but with determaination and hard work, everyone can cook well.
i dream to wear the chef hat, taking a wok in my hand, swooping the food around the wok, let the food fly above the wok, sprinkle a bit of alcohol and the fire will appear... buring the food a litle so as to give out the smell of the food. supervise people to ensure top quality of food is served. every step ,every ingredient, is very important. the timing is the most crucial part.
A good food is where the timing is just right. what need to be cook 1st and last is veri imp. it will affect the taste and smell given out. the art of presentation is aso very imp. a good food when served will make the customer feel happy if it is decorate nicely. a nice food is one which is make up of colourful dishes.
the freshness of food is VERY IMP. chef need to ensure the quality of freshness is there. go to market.. and koe the type of criteria to select fresh food.. ( sound like F&B modeule)
i fond of cooking since sec sch days. keep seeing my ah ma cook food. so fun. whenever she not cooking, i will be crawling up to cook from bed. remember last time around sec 3, i woke up in the middle of the night to cook... i crept from my bed to kitchen just to cook. i love cooking but my ah ma nv want me to cook. so i no choice but to cook secretly.
then middle of nite, i would heat up the wok, pour the oil and make sure the oil is hot before cooking. i digged the fridge and find
1) caxin (vegetable)
2) minced meat
3) egg
i started to fry those caxin, put the branch 1st (thicker, so is harder to be cook) then add the leaves of caxin... add little of salt, then lastly need to act oyster oil on top. ( to make the veget taste sweeter and make it look greener; improve the sight)
then cook minced soup and fried eggs. wow.. the eggs i fry was quite nice i muz admit.. lol. it is half cooked in the middle of the egg yolk. then the white part is cooked ( but not over cooked)
i keep contorlling the fire so as to make the egg white cook, but not so cook for the egg yolk. firstly, heat up the oil to make sure is dman hot. secondly, pour the egg nicely without breaking. use the pan and shake it around. oil is poured over the egg smoothly. this time, the egg white will be about to cook already. so make the fire smaller so as the egg yolk in the centre can be cook as the heat of the fire will travel to the centre. when u see the egg yolk abt to become bigger in size, it means the egg yolk is 60% cook. ths time , make the fire bigger for one last time so as to bring out the smell of egg and ensure the surrounding (egg white) is cook. then a plate of egg is done!
anyway, i haVE been thinking of the dishes i want to cook after xmas.
1st dish : Deep fry tofu, with minced meat over it ( the sauce will be sticky, by putting flour) and carrots and slices of cucumber to add colour to it --- needs seasme oil, normal cooking oil
shall name this dish as : GOLDEN TOFU
2nd dish: soft shell crab! buy it from chinatown maret where it will be fresh. dun buy it from NTUC where it is frozen for weeks...
deep fry the soft shell crab (SSC) cannot over do it.. the fire shld not be too big. put prawn flour over it to deep fry. add seasme seed over it ( more fragrant)
shall name this dish as : FLYING CRAB
3 rd dish: mixed vegetables... cook it by deciding which type of veget to cook 1st. is veri imp. diff veget takes diff time to be cook. the timing is imp . to cook the gravy, chop many garlic into small slices.. (very small), add bit of chicken soup ( soup muz be cook for at least 3 hr, best use chicken is those that are old, use the bones more) then add flour to make it a little sticky... after frying the vegetables, pour the gravity over it and is done!
